Warninks Spring Cupcakes

Gorgeous lemon infused sponge cupcakes topped with pillowy-soft whipped cream laced with Warninks advocaat are a delightful treat. Just adapt the style of decoration to suit your occasion.

Ingredients

120gButter softened
75gLight brown sugar
75gCaster sugar
180gPlain flour all-purpose
teaspoons Baking powder
2Eggs large, free-range
2teaspoons Vanilla extract
Zest of a lemon
60gSoured cream or Greek yoghurt
2tablespoons Milk
400mlDouble cream
150mlWarninks advocaat
Decorations of choice

Instructions

  1. Put 12 cupcake cases into the holes of a cupcake baking tin and preheat the oven to 180℃/ 350℉.
  2. Cream the butter and sugar together using electric beaters until light and fluffy.
  3. Add the eggs, one at a time, beating well between each addition.
  4. Mix in the vanilla extract, soured cream and lemon zest.
  5. Sieve the flour and baking powder into the bowl. Fold in using a large metal spoon, scraping to the bottom of the bowl to ensure a good mix. Stop mixing when the batter looks smooth and no streaks of flour remain.
  6. Divide the batter between the baking cases, filling each one no more than 2/3 full.
  7. Bake for approximately 20 minutes until golden and a cocktail stick poked into the centre of one comes out clean.
  8. When the cakes have cooled completely whip the cream and Warninks advocaat together until it reaches the soft peaks stage.
  9. Spoon the advocaat cream into a piping bag fitted with a wide nozzle. Pipe a generous amount of the cream onto each cupcake and decorate as desired.

Ideas for Decoration

  • Easter: top each cupcake with 3 Mini Eggs and some grated chocolate
  • General: opt for sprinkles of your choice, try some edible flowers or crystalised violets.
  • Christmas: top with desiccated coconut and a maraschino cherry for those Snowball vibes.

Note: Once topped with the advocaat cream, these cupcakes will need to be stored in the fridge. It’s best to add the decorations just before serving as some can discolour if stored in the fridge.
