Warninks Meringues
Our recipe for meringue nests is a simple to make treat that is smart enough to impress your guests, especially if presented as a wreath. Filled with advocaat-infused cream and topped with fruit of your choice this dessert will easily win hearts at the dinner table.
Ingredients
4 | Egg whites from large eggs |
200g | Caster sugar |
1 | tbsp Vanilla bean pasta |
½ | tsp White wine vinegar |
1 | tsp Cornflour |
450ml | Double cream |
100ml | Warninks advocaat |
300g | Mixed berries |
Optional – 75ml Warninks advocaat for serving
Instructions
- Preheat the oven to 120C/ 240F and line 2 baking sheets with baking parchment.
- In a stand mixer (or with electric beaters) whisk the egg whites to firm peaks.
- Whisk in 1½ teaspoons of the vanilla bean paste, the white wine vinegar and the cornflour.
- Keep the mixer running and sprinkle in the sugar 1 tablespoon at a time. Continue to whisk until the meringue is firm and glossy.
- Spoon the meringue into a piping bag fitted with a wide nozzle and pipe the meringue onto the baking parchment as follows:
• Either pipe 12 individual meringue nests onto the baking sheets
• Or draw around a 20cm (8-inch) cake tin on the baking parchment and use this a as guide to pipe the nests into a circle to form a wreath. Aim for 8-9 nests on the circle with a few spare nests on the second baking sheet. - Bake in the oven for 1 hour then turn off the oven and, keeping the oven door closed, let the meringues cool completely.
- When ready to serve whip the cream, remaining vanilla bean paste and the Warninks advocaat together using electric beaters until the soft peak stage is reached.
- Spoon the cream into a piping bag and use it to fill each meringue nest.
- Top the meringues with the mixed berries.
- Optional: serve with a drizzle of advocaat poured over the top.
Variations
- Peaches would be a lovely alternative to berries when they are in season.
- Fill a few of the meringue nests with vanilla-infused whipped cream without the alcohol to ensure that children and non-drinkers are catered for.
Top Tip
It is best to fill your nests with cream as close to serving time as possible. Leftovers can be stored in the fridge for 2 days but the meringue will soften.
